A native of Tokyo, Yuko Perez Onodera learnt traditional Japanese cuisine from her uncle, a renowned sushi master. Having taught throughout France for several years, she has chaired the judging panels at the French and European Sushi Championships since 2024, ensuring that the ancestral art of sushi is upheld.
MICHAËL PANKAR
Michaël Pankar, a sushi chef from Angers, made history by winning every single one of the five rounds of the 2022 French Championship, an unprecedented achievement. Having been runner-up in the World Championships in 2023 and then crowned the first European Sushi Champion that same year, he brings to the judging panel the experience and high standards of an exceptional competitor.
IPPEI UEMURA
Originally from Kyoto and having trained for seven years in Japanese culinary techniques, Ippei Uemura runs the Tabi restaurant in Marseille, which has been awarded three toques by Gault & Millau. A renowned judge at major international competitions, he embodies a discerning style of Japanese cuisine that is deeply rooted in his adopted home.
JORGE DIONICIO
A chef of Peruvian origin who trained at the World Sushi Skills Institute in Japan, Jorge Dionicio has been awarded a black belt in sushi and made a name for himself at the World Sushi Cup in Tokyo. Now a chef-owner in New York, he skilfully blends Edomae tradition with his Peruvian heritage.
JUNKO KAWADA
Junko Kawada, head chef and owner of the Ko’uzi restaurant in Antwerp, won a silver medal at the World Sushi Cup in Tokyo in 2013. An active member of the World Sushi Skills Institute since 2015, she helped establish the very first European Sushi Championship and regularly serves on international judging panels.
