The European Sushi Championship is the must-attend event for the continent’s best sushi masters, where tradition and innovation meet in a spirit of excellence.
Every year, this high-level competition brings together the best European sushi chefs, selected or qualified for their talent, precision and creativity. They come to proudly represent their country in a series of technical, artistic and culinary tests.
These meticulously devised tests highlight the mastery of traditional Japanese techniques, the freshness and quality of ingredients, and the ability to surprise and innovate while respecting the fundamentals of the art of sushi.
Each creation is assessed by an exceptional panel of judges made up of leading figures in Japanese and international gastronomy, guaranteeing a demanding and credible assessment.

Quinta do Jordão is an exceptional estate of almost 10 hectares located in Porto, Portugal, perched high above the Douro River. Chef Suda San,
an iconic figure in Japanese gastronomy, shares his expertise and passion for the art of sushi, inspiring chefs and enthusiasts alike with his refined creations.
Takeshi Suda is a master of Japanese cuisine, renowned for his excellence in preparing Fugu, the pufferfish known for its toxicity. With over 18 years of experience, he is actively trying to pass his skills to the next generation and one of the rolls he takes seriously is the principal judge of All Japan Fugu chef Championship.
Being Executive Chef at Okimizuki restaurant, located in the Kamo Aquarium in Tsuruoka, he offers immersive workshops where participants can discover the art of Sushi, traditional cuisine and Fugu preparation, notably in the form of Usuzukuri, arranaged in the shape of a crane, one of his specialities. His dedication and commitment to preserving the Japanese culinary culture led him to be appointed as the ambassador of the City of Tsuruoka, recognised as a UNESCO culinary creative city.
Today, his roles are diverse: he serves as head chef, leading a brigade of young chefs; as a faculty member at the culinary school; as a key figure in preserving the traditional skills of Fugu preparation; and as an active member of the Tsuruoka History Club, where he helps recreate ancient ceremonial cuisine.
He is excited to be adding the new role as the advisor to European Sushi Chef Championship.

- 11.40 am: Start of tasting test

- 12.05 pm: Tasting and scoring (by several members of the public chosen at random)
- 12.50 pm: Animation by the chef Suda San
- 1.50 pm: Start of Freestyle Test
- 3 pm: Animations:
