WAGNER SPADACIO
Born in Brazil into a large Japanese community, Wagner Spadacio is the 2017 French Sushi Champion and the 2018 World Runner-up. As executive chef at The Niwaki restaurant in Monaco, he has been drawing on his extensive experience as a competitor to serve on the judging panel for several editions.
SUDA TAKESHI
Takeshi Suda, the washoku chef at the Okimizuki restaurant, nestled in the heart of the Kamo Aquarium in Tsuruoka, is a renowned master of fugu preparation. As a culinary ambassador for his city, which has been designated a UNESCO Creative City of Gastronomy, he passes on his expertise to chefs from around the world.
IPPEI UEMURA
Originally from Kyoto and having trained for seven years in Japanese culinary techniques, Ippei Uemura now runs the Tabi restaurant in Marseille, which has been awarded three toques by Gault & Millau. A recognised judge at major international competitions, he embodies a discerning style of Japanese cuisine that is deeply rooted in his adopted home.
CRISTINA SOMBRAY
A chef originally from Castile who has made Bilbao her home, Cristina Sombray trained at the prestigious Tokyo Sushi Academy under renowned Japanese masters. As the first woman to win the European Sushi Championship, she is now a leading figure in Japanese cuisine in Europe.
DIEGO VIANELLO
The first Italian to represent his country at the Sushi World Cup in Tokyo, Diego Vianello has established himself as a leading figure in the Italian sushi scene thanks to an international career that has been recognised in several European competitions. His technical rigour and passion for Japanese cuisine make him a particularly respected judge.
IULIAN CONSTANTIN
Co-founder of the Zen Sushi chain and the first Romanian to be appointed ‘Goodwill Ambassador for the Promotion of Japanese Gastronomy’ by Japan, Iulian Constantin has been working for over twenty years to promote the art of sushi in his country. As organiser of the Romania Sushi Cup, he shares his expertise with the next generation of chefs.
JORGE DIONICIO
Chef d’origine péruvienne formé au sein du World Sushi Skills Institute au Japon, Jorge Dionicio a obtenu la ceinture noire de sushi et s’est illustré à la World Sushi Cup de Tokyo. Aujourd’hui chef-propriétaire à New York, il marie avec talent tradition edomae et racines péruviennes.
